General Questions
How do pickups work?
We usually have pickups on Tuesdays and Fridays. On Tuesdays, you can pick up your order at either our Crestline or Brookwood Forest locations. On Fridays, all pickups are at our Brookwood Forest location.
Can I order bread for a day other than Tuesday or Friday?
If you have a special request, let’s talk. Please send us an email (alcobaking@gmail.com) or message us on instagram (@alcobaking).
What happens if something comes up and I am unable to pick up my bread?
If you haven’t picked up your bread by 6 PM, we will send you a reminder. If you are unable to pick up your bread that day, please send us an email (alcobaking@gmail.com) or message us on instagram (@alcobaking). We’ll do our best to make arrangements for pickup the following day.
Is it okay that there is condensation in the bread bag?
Our bags have micro-perforations to ensure excessive moisture doesn’t collect in the bag. On a humid day or when the bread moves from one temperature to another (i.e. from outside to a car with AC or colder outside into a warmer house), you may see condensation. Upon pick-up, open the bag for a few minutes. After venting, re-seal the bag and enjoy.

Sourdough Questions
What is the difference between sourdough bread and regular bread?
Sourdough bread is the OG of breads. Before the last 100 years or so, sourdough was just called ‘bread’. You may also have heard folks refer to it as naturally leavened bread. Sourdough bread is fermented and leavened by wild yeast and gut-friendly bacteria harvested from the air and maintained via a sourdough starter.
Most modern forms of bread use a specific kind of commercial yeast, while sourdough breads rely on wild yeast and lactobacillus, a gut-friendly bacteria, to work their fermentation magic. The process of natural, long fermentation in sourdough enhances flavor, increases digestibility, & unlocks nutrition.
Did you know that sourdough bread is lower on the glycemic index? It’s a great option if you are trying to keep your blood sugar in check.
Why does sourdough bread have a tangy flavor?
Fun fact: Not all sourdough bread is actually sour. It can vary.
The sourness of a loaf boils down to the fermentation and how you manage specific variables like time and temperature throughout the process. As the dough ferments, the wild yeast and gut-friendly bacteria produce lactic and acetic acids. These acids can create a whole spectrum of flavors and varying degrees of sourness.
How long does sourdough bread stay fresh?
ALCO’s sourdough bread is free of preservatives and typically stays fresh for 4 to 5 days. Make sure to store your bread in a cool, dry place. You can keep it in its original packaging, wrapped up in a clean cloth, or a paper bag. The bread will start to harden over time, so we recommend slicing your bread within the first few days of purchase.
Can you freeze sourdough bread?
Yes, sourdough bread freezes very well. We recommend slicing your bread before freezing so you can easily pull out individual slices, toast them, and voila. Delicious bread on demand! Be sure to freeze in a sealed, airtight bag or container. Bread is best enjoyed within the 1st month or two after freezing.
